HMSHost UK completes first 2025 restaurant opening at East Midlands Airport
Alembic offers Mediterranean-inspired light bites featuring seasonal produce alongside premium, locally sourced spirits from Derbyshire’s White Peak Distillery.

UK. HMSHost UK has launched its first restaurant in 2025, revealing a new concept named Alembic at East Midlands Airport.
The Avolta company said the dining venue “kick starts a year of exciting openings”.
Alembic offers Mediterranean-inspired light bites featuring seasonal produce alongside premium, locally sourced spirits from Derbyshire’s White Peak Distillery.
White Peak is the producer of Wire Works Whisky, Shining Cliff Gin and Cask Aged White Peak Rum, all of which appear on Alembic’s extensive drinks menu.
The restaurant’s official opening was part of East Midland Airport’s wider 60th anniversary celebrations, marking the significant role the travel hub has played in its local community and economy over the last six decades.
Alembic’s first guests were welcomed with a specially created anniversary mocktail, alongside other celebratory treats.
Avolta F&B & Essentials Senior Coordinating Director Beth Brewster said, “We’re really excited about our Alembic concept, which taps into what we do brilliantly: creating amazing dishes using locally sourced products and complementing them with local spirits.
“2025 is a really exciting year for the F&B part of Avolta’s business in the UK, with even more exciting news coming soon. Alongside our duty-free business, we’re focused on creating a great experience for both our partners and our customers.”
East Midlands Airport Customer & Planning Director Mike Grimes commented, “We are absolutely delighted that this new restaurant concept has been kicked off at East Midlands Airport as part of our 60th anniversary celebrations.
“I’m sure our customers are going to love the locally sourced dishes and drinks available at Alembic, which is part of a whole range of new improvements to enhance the customer experience at the airport.”
East Midlands Airport, part of Manchester Airports Group, served more than 4 million passengers in 2024. This was the first time since the COVID-19 pandemic that number has been exceeded.
