NORWAY. Leading travel experience player Avolta has unveiled proprietary bakery concept Mel – Norwegian Bakery in the Oslo Gardermoen Airport International Departures Terminal.

The 72-seat Mel (Norwegian for ‘flour’), set in 196sq m and including an adjacent back-of-house bakery, is located in a terminal lounge area newly named Torget (the square).

The concession offers freshly baked goods from sweet pastries to baguettes that can be consumed in-store or packaged to-go.

Menu highlights include Mel’s oat and sourdough bread with egg and avocado; Salted Caramel or Oreo bolle (bun in Norwegian), a traditional sweet pastry; Vanilla and Chocolate ‘sløyfe’ (meaning bow tie in Norwegian), a traditional sweet dough twisted into a bow.

To complement the artisan food offer, Mel serves hot drink options from Costa Coffee, while on the cold beverage menu guests will find a variety of sodas, water and juices, along with both still and sparkling wines. Still wines include Chablis, Riesling and Barbera, while Bottega sparkling wine is also available.

A selection of local and international beers, both alcoholic and non-alcoholic – including a gluten-free option – also feature on the drinks list.

The Mel concept embraces Scandinavian-style design, characterised by its clean lines, simplicity and functionality. Avolta noted the use of wood and marble adds “a natural yet elegant touch, creating a warm and sophisticated atmosphere”.

A key feature is the incorporation of the terminal’s existing ‘green living wall’, which seamlessly blends nature into the space.

The Mel store has a strong sustainability element, with many recycled materials taken from the site’s previous bakery concession.

Seating options include comfortable sofas along the green living wall, high tables with chairs and a large marble-top sharing table suitable for groups.

Avolta CEO for Northern, Central and Eastern Europe Walter Seib told The Moodie Davitt Report: “Avinor [the Oslo Airport operator] challenged us to create an artisan bakery that could provide freshly baked goods from the first flight to the last, and with Mel – Norwegian Bakery, we’ve delivered something special.

“Mel is a celebration of Norwegian craftsmanship and bold flavours, brought to life through innovation and passion. We can’t wait to welcome travellers to experience its outstanding design and delicious offerings on their next visit to Oslo Airport.”

When its food & beverage programme at the airport is completed, Avolta will operate ten stores covering more than 2,500sq m and accommodating almost 1,000 seats.

Concessions already operating include Burger King, Oslo Food Hub, Peppes Pizza and Asian cuisine concept Two Tigers.

Upcoming openings before the end of April include Journey – Kitchen & Bar, Crafts – Oslo Gastro Pub, Piq Niq and Asia Street Cooking.  ‍
